Freeze drying is a process that removes water from a material under special conditions (low temperature and pressure) which allows the water to be removed by converting it directly from ice to water vapour (a process called sublimation). Materials processed in this way can be preserved for long periods of time and transported easily - for example into space (or in your backpack).
